Raw Beet Pesto

This recipe is from Phoebe’s brother, Alexander, who lives in Israel. He made it while visiting last year and we loved it at first bite. The freshness of the flavors make this a unique raw dish.

Ingredients: 3 big beets | 1/2 cup sunflower seeds | 1/3 cup olive oil | juice of 2 lemons | 2 cloves garlic | salt, to taste

Combine all ingredients in a food processor and serve with crackers!
